Here is a spile from back in the cast iron days. These days they'd be formed sheet metal or injection molded plastic. Drill a 7/16" into the sapwood, tap the big end into the tree, and hang your bucket on the hook.

I tapped the maples in my Michiigan woodlot one year.* Was nice to have an honest reason to mooch around in the woods, and I had the additional joy of taking the empty jugs out and the full ones back on my Kawasaki 175 dirtbike (not too efficient, but non-negotiable aspect of the project).
* I'd have done it more years than one, but I joined all my neighbors in losing our farms instead. Thanks, Secretary Butz!
