OK, here's my shot at it:

"Dedenda" can also mean "to deduct or to take away" (opposite of "adenda" which is an arcane spelling of "addenda").

In this piece of literature from the Brill Company on pages 42 and 43 the advantage of the "Dedenda Gong" is touted as the fact that the hammer instantly moves away from the gong ("...bringing it away from the gong...), resulting in a clear, crisp note like that produced by a piano.

So anyway that's my shot at how they got the name.
